I had these a while back when my friend Stacey made them and had been meaning to try them out on my own. Christmas turned out to be the perfect opportunity. Mine could have used to cook a little longer as they were still a little under-cooked in the middle after 25 minutes, but otherwise they were delicious!
Cappuccino Brownies
Ingredients:
1 cup sugar
2 squares (1 ounce each) unsweetened baking chocolate, melted and stirred
2 egg whites
1/3 cup canned black beans, rinsed and drained
2 Tablespoons instant coffee
1 Tablespoon vanilla extract
¼ cup all-purpose flour
½ teaspoon cinnamon
¼ cup whole wheat flour
¼ cup margarine, melted
1 Tablespoon sifted powdered sugar
Directions:
1. Preheat oven to 350°F. Spray a 9x9 inch pan with cooking spray.
2. Combine sugar, egg whites and beans in a food processor or blender; process until very smooth. Transfer to a medium-sized mixing bowl. Stir in the flours, butter and chocolate until smooth. Add the coffee, vanilla and cinnamon; stir until smooth. Transfer the mixture to the baking pan.
3. Bake approximately 25 minutes; the middle should be slightly wet when removed from the oven. Cool. Sprinkle with powdered sugar just before serving.

Sounds yummy! Nick and I got a new 'smaller' spatula at the store the other day (after not having a small one for the brownies you brought over the other week)--- so feel free to bring them over whenever you want. :)
