CHEESE STEAK QUESADILLAS MINUS CHEESE:
(2 t oil, 1 onion, sliced)
1 green pepper, sliced
½ lb sliced roast beef
(1 - 2 T horseradish)
4 whole wheat tortillas
½ c shredded low-moisture mozzarella cheese
10.5 oz can Au Jus
Sauté onions 5 minutes, add peppers and sauté
until soft, about 5 minutes more. Remove onions and
peppers from pan and place a tortilla in the pan. Top
w/ half of cheese, beef, onions, peppers and
horseradish. Top w/ another tortilla and cook until
browned on both sides and cheese is melted. Repeat
w/ remaining tortillas.
Heat Au Jus as directed.

BUTTERNUT SQUASH CARBONARA
6 slices turkey bacon
2 c diced butternut squash
½ box whole wheat angel hair pasta
(2 egg yolks, 2 T coconut or almond milk,
1 t minced garlic, 1 T sage, chopped, black pepper)
Cook bacon and set aside. Add squash to pan and
cook 8-10 minutes or until soft. Boil pasta as directed,
drain and reserve some pasta water. Mix together
egg yolk and milk. Add garlic and sage to
squash, season w/ black pepper. Add pasta and
bacon to pan, tossing to coat. Remove from heat and
add egg mixture. Toss to combine, adding pasta
water as needed to form light sauce.

PEPPERONI LOAF MINUS CHEESE ON MINE:
1 refrigerated pizza crust
8 oz low moisture shredded mozzarella
4 oz pkg turkey pepperoni
(1 egg white, 1/2 t garlic salt,
1/2 t pepper, 2 t Italian seasoning)
8 oz tomato sauce, for dipping, warmed
Spread pizza crust to a large rectangle on sprayed
cookie sheet. Brush w/ egg white. Sprinkle spices
evenly, then cheese, then a single layer of pepperoni.
Roll loaf up, length-wise. Pinch ends. Place seam
side down. Brush egg white on top. Bake 20
minutes @400, until bread is done. Serve w/ warmed
tomato sauce seasoned w/ Italian seasoning to taste
for dipping.
**I couldn't find refrigerated dough so made my own using this recipe:
1 3/4 t active dry yeast
1/2 t granulated sugar
3/4 cup HOT water
1 3/4 cup flour
1/2 t salt
Dissolve yeast and sugarin water, allow to rest 8 minutes.
In separate bowl, combine flour and salt.
Pour yeast mixture over flour mixture and mix well with a heavy spoon.
Turn dough onto a floured surface and knead for 2 minutes.
